Avocado & Mint healthy dip

Avocado and mint dip

Avocados have to be one of my all time favourite foods.  Avocados are full of the ‘good fats’ our bodies need to function properly, as well as having a generous amount of protein, vitamins, minerals and fibre.

When it comes to choosing the right snacks to keep me in check for the day, I love adding avocado to almost anything!

This home made dip is super fast and super easy to make, and that’s why its my go-to dip.

Ingredients
Serving 200 grams

-       1 whole avocado (depending on how much you want to make)
-       ½ cup fresh mint leaves
-       ¼ red onion
-       ¼ lemon
-       ¼ water

What you will need
-       Blender

Method

1.     Cut open your avocado and remove the seed
2.     Cut slices into the avocado and scrape it into the blender
3.     Finely chop mint leaves and red onion and add with the avo
4.    Pour the water and squeeze the lemon juice into the blender
5.     Crack some pepper and salt before mixing away
6.     And blend! It only takes about 20 seconds to puree the dip
7.     Remove the dip into a serving bowel or container and add a mint leaf for a finishing garnish

This dip is great to have with some cut up carrot and celery sticks.
